My Grandma's Best Original Carrot Cake Recipe!

Once you try it you'll know why it is the best original carrot cake recipe there is!


I love carrot cake so much that last year my neighbor used this recipe to make me a small square birthday cake.

That was such a thoughtful birthday cake idea, that it really got me to thinking about birthday cakes.

Do you ever get so caught up in thinking that the birthday cake has to be fancy and spectacular that you forget to just enjoy deliciousness of a simple cake?

Really, birthdays should be about enjoying time with friends and family and a small birthday cake like a this cake (using my grandma's best original carrot cake recipe) is the perfect way to do that.

It’s a really great holiday cake to make, too. You know those little carrot looking candies that come out around Easter? Those are really cute to use for a holiday cake decoration.

The kids think its funny and practically forget that they’re eating a cake made from a vegetable. Some kids leave cookies out for Santa; mine like to leave carrot cake out for the Easter bunny.

Ingredients:

1 cup vegetable oil

2 1/2 cups flour

2 cups shredded carrots 3 eggs

1 1/2 cups sugar

10 ounces crushed pineapple with juice

2 teaspoons vanilla extract

1 cup shredded sweet coconut

2 teaspoons baking soda

1 teaspoon salt

Directions:

- Preheat the oven to 350°F

- Spray the pan with nonsticking spray or line with parchment paper

- Mix eggs and sugar slowly together - Add while mixing oil and vanilla

- Start adding pineapple, coconut and carrots

- Sift the flour, baking soda, and salt - Pour the batter into the pan

- Let it bake for 45 minutes

- Leave the cake to cool

- Frost
