Easy Layer Cake Icing

by Barbara O'Connell
(Feasterville, PA )

I wanted to make a layer cake and had lent my pans to my daughter. I used a bundt pan instead and just cut across the middle. Here is where I always had a problem even if I put the layers in the freezer.

You can't ice the inside where all the little crumbs are and if you turn the bottom upside down it loses its shape. Soooo I took a paper plate that had a little lip on it and covered it with waxed paper, then I iced the paper plate filling it up to the lip which made a nice thick icing layer.

Then I put it in the freezer for about a half an hour. I took it out peeled the wax paper and had a solid layer of icing. I laid it on the bottom and it fit perfectly, put the top on and my cake went together great.
