When most of us want an ice cream cake we run out to a local store to purchase one. Never would we consider making our own. After all it has to be very difficult.

Let me tell you it isn’t any harder than making any other cake. You won’t need any special supplies except for a spring form pan. Line a 9x132 pan with foil leaving some foil extending over the ends of the pan.

When the brownies are baked and cooled completely lift them out of the pan onto a cutting surface. Using the bottom of the spring form pan cut a circle from the brownies.

Put the circle in a 9 inch spring form pan. Spoon ½ gallon of softened ice cream over the brownie. Cover and freeze for 2 hours or until firm. Have fun decorating the cake to look lie an animal, baby or like traditional ice cream cakes.
