Mickey Mouse Cupcakes and Smash Cake Decorating Techniques

Mickey Mouse cupcakes and smash cake for my nephew's birthday

This cake was made last year for my nephew's birthday.

He adores Mickey Mouse, has numerous Mickey Mouse toys and figurines. Last year his parents organized him a theme birthday party so I made this lovely little cake for him.

He really enjoyed my cake. Now you can read my Mickey Mouse cupcakes and smash cake decorating techniques and discover the secret of making such cakes.

First I made the layer in the smaller rectangle pan. For this layer I put the flour, sugar, baking powder, and salt in a mixer bowl. With the electric mixer on low speed, I blended for 30 seconds. Then I added the butter and strawberry puree and mixed it to blend the ingredients.

Then I raised the speed to medium and beat until light and fluffy, 2 to 3 minutes; the batter resembled strawberry ice cream at that point. In another bowl, I whisked together the egg whites, milk and red food dye. I added the whites to the batter in two or three additions, and mixing to incorporate after each addition.

I mixed these two mixtures and out of it I baked the layer for 30 minutes, or until a cake tester or wooden toothpick inserted into the center comes out clean. Then I allowed the layer to cool in the pan for 10 to 15 minutes. I inverted and turned out onto wire racks and let it stand until completely cooled before assembling the cake, at least an hour. Then I made strawberry filling.

First I creamed the butter and salt for about 30 seconds, added half of the powdered sugar and the milk to the butter and beat again until combined. Then I added the rest of the powdered sugar, the vanilla, the lemon juice, and the strawberry preserves and beat until combined on high speed for 5-6 minutes or until the frosting is fluffy.

I frosted the layer with this cream and covered the cake with red fondant. On the top of the cake I placed some figurines in order to make the cake more interesting for kids and around the cake I put cupcakes with Mickey Mouse figurines on top of each cupcake. You will agree it looks nice.
