Ingredients

  • 3 egg

  • ½ cup castor sugar or superfine sugar

  • 2/3 cup self-rising flour

    Directions

    1. Preheat the over to 375 F (190 C), grease an 8 or 9” round cake pan.

    2. In a medium bowl, whip together the eggs and castor sugar until fluffy.

    3. Fold in flour, pour into prepared pan.

    4. Bake 20 minutes in preheated oven, or until top of cake springs back when lightly pressed.
