This cake goes good with any type of fruit and soaks up liquid well.

Some ideas for decorating these cakes are: Strawberries and whip cream, if you put sugar or sugar substitute on the strawberries or blueberries and refrigerate for an hour, the fruit makes its own juice that the sponge cake will soak up.

Bananas mixed with vanilla pudding, poured over a slice of sponge cake is a good way to get those five servings of fruits and veggies.

Decorating sponge cake can be really easy. A little bit of caramel sauce or chocolate sauce, even coffee liqueur would all taste great on top. Decorations don’t need to be fancy. Sometimes the less decorating you do, the better.

Sponge cake can be made ahead of time. You can have this cake at tea or after dinner, you could even have it at breakfast if you served it with fruit and yogurt. Or make it a light cake by substituting a sugar substitute for sugar.
