I don't think I chose to become a cake artist...I think cake art chose me! Being able to decorate cakes well really depends on your artistic ability.
It has nothing to do with being able to squeeze icing out of a bag.
A cake decorator who is able to visualize different elements and colors coming together is going to be more able to custom design a work of art in sugar.
I really believe that my ability to sculpt, sketch, paint, hand model, and visualize these works of art make the cakes that I create unique.
Every cake decorator has a different style, much like Michelangelo, Monet, and Picasso. Unlike those masters of vision, few cake decorators will ever be famous for the artwork that is their labor of love.
When crumbs on a plate and a dull photograph are the only things left to show for those hours of sculpting and painting, it's difficult to gain appreciation for a masterpiece. So why then do we choose to go sleepless nights for ridiculously low pay slaving over works of art that will only go into the gullet?
Cakes that are works of art are for very special occasions, and those very special occasions make people happy. Cakes make people happy! I love seeing the wide eyes and jaw dropped smiles when someone first sees the masterpiece that I made for them.
I love hearing them ask me "is it really a cake" or to say "I don't even want to cut it because it's so beautiful" Knowing that I was a part of making that special occasion wonderful is why I, and every talented cake decorator, put the extra effort into perfecting that work of sugar art. I don't mind that cake art chose me...I think it's really sweet!
