I have a sweet tooth for two of the popular cakes-fruit cake and butter cake. Let me discuss easy cake recipe for each of them. First let us go for the fruit cake.

Prepare the nuts and fruits. Pour the liquor to be used over them. See that the mixture is left undisturbed and covered for about three days. The fruit cake should be baked at a low temperature.

One should note that for preparing any cake, the pan should be preferably coated with waxed paper so that the sides of the cake do not get burned. Use a knife or a tester at the center of the cake to see if it is moist and not doughy.

The butter cake is favored for its tiers. You can give it an almond or raisin flavor to make it taste distinctly sweet. As in almost all cake recipes, see that the oven is preheated to 350F.

Grease and flour the pans. Use cream butter and sugar in a mixer and mix it till the contents become light and soft. Put in eggs one by one, mixing and blending well with each addition.

Put in some vanilla essence, raisin or almond flavor for added taste. Mix flour well with salt and baking powder. After you add the flour, follow it alternately with milk.

Pour the mixture into the cake pans and bake for half an hour. You can take a cake tester or a knife and check the top center of the cake for consistency. Then take the cake out and cool it on the wire rack for about 15 minutes.

For frosting you could melt butter in a sauce pan and let it cool down. Then you add cocoa powder, vanilla etc and stir until it becomes smooth.

Remember that when you frost a cake, you should put a thin layer all over the cake. Follow the cake recipe but feel free to put your own innovations at work with the frosting and decorating of the cake.
