Recipes for the Mad Hatter Cake

Basic Pound Cake Recipe:

Ingredients:

3 cups cake flour

6 large eggs

1 pound butter

1 pound sugar

2 teaspoons of pure vanilla extract

1/2 teaspoon salt

1/2 cup buttermilk

1/2 teaspoon baking soda

1 teaspoon baking powder

Preheat the oven to 325 degrees

Method

Sift the flour, baking soda, and baking powder into a large mixing bowl, add the salt and sugar. Soften the butter to room temperature and add to the other ingredients. Mix in the Eggs one at a time, and beat on low. Slowly add the buttermilk with the vanilla extract.

Beat on low for another minute, until the ingredients are thoroughly combined. Pour the batter into an oiled cake tin and bake for about an hour. Cool thoroughly.

Piping Gel Recipe

This can also be purchased ready made

Ingredients

2 envelopes (2 tablespoons) unflavored gelatin

2 tablespoons cold water

2 cups light Karo syrup

Method

Sprinkle the gelatin over the cold water in a small saucepan and let it rest for five minutes, then heat on low until the gelatin has dissolved, being careful not to dissolve the gelatin.Add the karo syrup and heat thoroughly, then cool and keep the clear gel in the refrigerator for up to two months. To color it for use on the cakes add a paste or gel or food coloring drops. You can use it from a parchment cone or a little squeezie bottle

Ingredients:

12 inch round pound cake

7inch pound cake

6 inch pound cake

5inch pound cake

Rolled fondant icing

Roll out the fondant icing and color it pink if you are using the same color on the cake, roll on to the bottom tier. Cut out celestial shapes from the icing in contrasting colors, make suns moons stars etc from cardboard stencils adhere to the cake with stiff icing. To achieve the same colors as the photographed cake use rose (pink) with royal blue.Cut out the letters of the name by making cardboard stencils. Draw the letters you need onto cardboard and cut out, use these as stencils to make the letters of the name of the child.

To construct the top part of the hat place the 5inch cake on a plate, add a frosting of your choice, and sandwich the 6 inch cake on top, then add more frosting and add the 7 inch cake. Add an apricot glaze and then Roll out some purple colored fondant icing and roll over the cake.

To make the spirals cut some pink fondant icing into strips about an eighth of an inch thick and carefully wind around a bendy straw. Let dry for a few hours and carefully remove the straw. Cut out star shapes and the numeral of the birthday if necessary by making a cardboard template of the number, adhere all the decorations with a little icing sugar.

Pipe little beads of pearls with gel icing around both layers of cake. Cut out extra stars to strew around the plate or the serving board.
