This is reported to have been one Sinatra’s favorite foods. It is an eggplant cake!!!! There are a number of different versions of this recipe. It is more like a lasagna than anything else.

The recipes I found, were very labor intensive and by no means an easy recipe. Obviously, there is no decorating on this cake. Preparing the eggplant , takes time.

The eggplant is breaded and fried in oil and then layered in a deep dish, and sauce is poured over each layer. It can last like this for up to a week for all of the flavors to blend.

A real cake associated with Frank Sinatra, is the Hawaiian Happy Cake It is wonderful cake with pineapple and macadamia nuts.

He used to have them shipped to the mainland from Hawaii. The secret recipe is of course not available and although none have duplicated it, many have tried.
